FISH COOKERY 10.00am — 4.00pm This fun filled day course introduces you to handling, selecting, classification, skinning, gutting, filleting, storing, freezing and cooking a selection of fish. After lunch you will put your new found skills to work by producing one of the dishes demonstrated to take home with you.

FOOD FROM AROUND THE WORLD 10.00am 4.00pm Rekindle memories of holidays as I take you on a culinary trip around the world. Experience a great diversity of tastes, textures and ingredients in the various dishes demonstrated, and discover how easy they are to prepare from the simplest to the most complex. After lunch you will create one of the dishes demonstrated to take home as a sample.

A DAY OF SAUCINESS 10.00am — 4.00pm Take away the mysteries of sauce making on this one day course. I will show you how easy it is to make delicious sauces to accompany a selection of dishes in a fraction of the time using modern methods. DESSERTS FOR DINNER PARTIES 10.00am—4.30pm A fantastic course for all budding patissiers. Let me teach you to give your dinner party desserts the ‘WOW FACTOR’. Learn how to make mouth-watering desserts the easy way. You will work individually and in a group to produce stunning desserts that you can serve individually or part of an assiette. A sample of the dishes made will be taken home.

SPECIAL AND DECORATIVE BREADS 9.00am—5.00pm Come along and enjoy a fabulous day producing special and decorative breads. Learn traditional and modern methods of bread making using various types of yeast. The course is 95% ‘Hands On’. You will take home all the goodies you produce.

FIVE DAY PATISSERIE COURSE 09.00am - 5.00pm A five day Patisserie course for those students who would like to further their studies in Patisserie. The course has been designed for those students who may like to work in the Patisserie Department of a hotel, and either work or open their own bakery/tea shop. As with the two day course the five day course content allows you to produce a wide variety of patisserie goods, covering various types of pastry – savoury – pate brisse – pate sucree and their fillings – fermented goods – Devonshire splits – tea loaves etc; puff paste – fresh and convenience – meringue goods – egg custard based desserts – gelatine products – cake production to include Torten & Gateaux garnishing of goods for final presentation. Patisserie equipment – hygiene and safety – refrigeration and storage. The course is 95% ‘HANDS ON’ and is quite intensive; a high degree of individual attention will be given to every student. Each day starts at 9.00am with demonstrations and hands on, you will work individually and as part of a team to produce a variety of patisserie goods. All the goods you make you take home with you. Maximum number of students on course is 5.
